Around April every year, green rice balls, a specialty snack in Kunshan, appear on the table of most households. Each bite of the green rice balls brings a feeling of spring. To make this snack, the juice from a kind of green leaves is mixed into rice and wheat flour and kneaded into small balls. Then additional fillings such as red dates, walnuts, sugar, and lard can be added before steaming. The rice balls have a soft and sweet feel and taste natural and refreshing.
